Kakushin (革新, "innovation") is built around one idea: showing off the best seasonal produce from Japan through imaginative, modern omakase. The courses follow what is finest right now, not a fixed script that runs all year.

This season: autumn 2026 (October–November)

In Japanese cooking, autumn (aki) is one of the richest seasons of the year. Chef Yan, with more than three decades as an omakase chef, builds the autumn courses around:

  • Sanma (Pacific saury) from Nemuro in Hokkaido or Kesennuma. Rich and oily, at its best in October, and served when landings allow.

  • Modori-gatsuo (autumn bonito) from Kesennuma and the Sanriku coast. Fatty and full-flavoured, in season from September to November.

  • Aki-saba (autumn mackerel) from Hachinohe in Aomori. Fatty and best lightly cured, in season from October to January.

  • Akisake and ikura (autumn salmon and salmon roe) from Hokkaido, in season from September to November.

  • Nodoguro (blackthroat seaperch) from Wajima in Ishikawa or from Shimane. Buttery and usually lightly seared.

  • Hon-maguro (bluefin tuna) from Oma in Aomori, at its fattiest from October to December.

  • Matsuba-gani (snow crab) from Tottori, Fukui or Ishikawa. The season opens on 6 November 2026, so crab is a November-only item.

  • Matsutake mushrooms, the fragrant prized mushroom of early autumn, in season from September to early November.

  • Kuri (chestnut) from Ibaraki, until late October.

  • Ginnan (ginkgo nuts) from Aichi, until mid-November.

  • Kaki (persimmon) from Wakayama or Nara, from late October.

  • Yuzu from Kochi or Tokushima, with the yellow fruit arriving from late October.

  • Shinmai (new-harvest rice) from Niigata or Yamagata.

Seafood is sourced directly from Toyosu Market in Tokyo and prepared the same day. Fish is flown in by air freight several times a week except Mondays, mostly on Tuesdays and Fridays.

Ingredients depend on the market and the weather, and may change at short notice. Tell us about allergies when you book.

How the seasonal omakase works

Kakushin is a full-service modern omakase restaurant, not a small sushi-only counter. Each omakase is a progression. It can include seasonal starters, sashimi or carpaccio, warm dishes (grilled and steamed), a Kakushin signature, nigiri, the house omakase soup and dessert. So sushi is one important part of a broader tasting menu.

The kitchen makes some of its own seasonings: house ponzu and shoyu are aged seven days, and wagyu is sous-vide for about 30 hours. Chef Yan picks each course on the day according to the market, so the same menu tier can taste different from one visit to the next.

Choose a menu tier when you book (see Prices). You can add notes on dietary needs or a celebration in the booking form.
